  • kale in green smoothies
  • add it to soups
  • steam it and top with butter
  • add to salads
  • kale in a vegetable frittata or omelet
  • fry it in coconut oil with onion, garlic, salt, and pepper
How To Freeze Kale

Too much kale to use all at once? Freeze some! It's easy, and the kale will work great in smoothies, soups, pasta dishes, frittatas and omelets - all kinds of dishes that call for cooked kale or pureed kale (as in a smoothie).

You can steam or blanch kale before freezing it, but this step really isn't necessary. What it does is preserve the color and texture of the kale, but if you're going to be cooking it anyway when you take it out of the freezer, you can opt to skip the blanching step now. 

  1. Wash the kale. I like to hold the bunch by the stems and shake it out on the front porch with a good swing of the arm. Alternatively, a salad spinner is a more conventional way to dry your greens. =)
  2. Remove the stalk and chop the leaves.
  3. If you decide to blanch your kale, do that now like this. First, steam it or boil it for 3 minutes, then plunge it into ice water to stop the cooking process. Spin dry.
  4. Loosely pack your blanched or unblanched kale leaves into zip top bags, date them, squeeze as much of the air out of the bag as you can, and seal.
