How To Peel Beets

Before you cook or slice your beets, you'll want to get rid of their paper-thin skin. It's easy to peel off with a vegetable peeler while they're raw; it will stain your fingers scarlet. Or roast the beets gently until they're just barely tender, then rub the skins off with a paper towel. Personally, I don't worry about my bright red hands and generally peel them raw. It's fast, and then it's done. 

How To Freeze Beets

Beets don't freeze well raw, but they're quite good if you roast them first. Here's how to do it. 

  1. Scrub the beets and trim off the tops, but leave the 'tails' intact.
  2. Place the beets in a 9 x 13 pan and add 1/4 cup of water. Cover tightly with foil. 
  3. Roast in a 400 degree oven for 45 minutes to an hour. To make sure they're done, insert a fork or skewer.
  4. Trim off the tails, then peel the beets by rubbing off the skins.
  5. Slice or cube the beets and pack into zip top bags. Squeeze out as much air as possible before sealing the bags. Mark the date on the bags and freeze. 
  6. To use frozen beets, thaw them first, then fry in butter, roast with butter and olive oil, or boil and mash them.

Our Favorite Beet Dish: Roasted Beets & Onions

My opinion on most vegetables is the simpler the better. I don't like the idea of running to the store for special ingredients, but the real reason is that vegetables are so good on their own if you know how to prepare them. Why ruin the dish with a whole bunch of seasonings and other extras? 


Ingredients

  • beets
  • 1 yellow onion
  • 2 - 4 tablespoons butter
  • drizzle of olive oil

Method
  1. Preheat the oven to 400 degrees.
  2. Butter a lidded casserole dish and peel enough beets to fill it loosely. 
  3. Slice the onion and beets and layer the slices in your casserole dish. 
  4. Dot with butter, drizzle with olive oil, cover, and roast for 60-90 minutes, or until your beets are tender.
